Violet Cake

Let's talk about another exquisite French cocktail – the violet Kir with champagne, or Kir Impérial à la violette. Choosing this vibrant purple drink will showcase your elegance and knowledge of the mountainous region bordering the French Riviera, known to the French as l'arrière-pays. I must say, I adore this picturesque part of France – with its narrow winding streets, ancient leaning stone houses and breathtaking views of the mountains, valleys and sea. It is in this region, above the bustling city of Nice, not far from Cannes and on the outskirts of the mediaeval town of Les Tourrettes, that this delicate flower with its subtle scent – the Tourettes violet – thrives. Make sure you visit this magical place if you get the chance. And book a table at the acclaimed Bistrot Gourmand Clovis, a gastronomic gem. And, as you enter the old part of the town, don't miss the boutique "Violettes de Tourrettes". Here, you'll find not only violet-scented perfumes, but also a variety of edible treats made from these delicate flowers. Such treats include: — Violet jam — Caramel paste with violet — Lollipops, dragées, pastilles and hard sweets made from violets — Candied flowers and violet tea — …and not forgetting your cocktail-mixing ingredients – violet syrup or liqueur, which can also be used in baking or ice cream, and the potent (45°) violet Pastis which is flavoured with aniseed. Isn't it amazing how one flower can inspire such creativity!

Ingredients

  • 220 g flour
  • 1 sachet (10 g or 1 tbsp) baking powder
  • 60 g icing sugar
  • 150 ml cream
  • 30 ml milk
  • 3 eggs
  • 40 ml violet syrup
  • For the glaze:
  • 60 g icing sugar
  • 2 tsp violet syrup

Method

  1. 1Preheat the oven to 180°C.
  2. 2Whisk the eggs with sugar until pale. Gradually add the flour, baking powder, cream, milk and violet syrup. Mix until smooth.
  3. 3Line a cake tin with baking paper greased with butter and pour in the mixture.
  4. 4Bake in the middle of the oven for 30 minutes. Use a skewer to check the cake is cooked. Remove and leave to cool on a rack.
  5. 5Prepare the glaze: in a bowl, mix the icing sugar with the violet syrup and a few drops of water. Drizzle over the cake. If desired, decorate with violet lollipop crumbs or candied violet petals.
