Summer Punch with Elderflower Cordial

Looking out at the blossoming Regent's Park, I'm amazed: in just two weeks, it has transformed into a floral paradise. Even the freshly mowed meadows near the water are adorned with delicate daisies, seemingly planted by nature itself. The natural beauty and allure, surrounded by lush trees and vibrant flower beds, make it feel like the gardener went all out, creating a magical display. Spring is in full bloom and the scents are enchanting. In the heart of the park lies my favourite café where I can choose a sunny table with a QR code for easy ordering. And there it is on the drinks menu – the classic PIMM's cocktail. Instantly, memories flood back from the summer when I volunteered at the lively fair in my local area of Highgate. The PIMM's stand consistently drew the longest queues. PIMM's is like an English take on a light punch, with a touch of soapiness, blended with tonic water or lemonade and a mix of fruits – strawberries taking the spotlight. My fondness for PIMM's grew as I watched it flow freely at that fair, bringing with it joy and smiles.
