Mango Lime Marmalade

Let's talk about blue cheeses – what a tasty topic. Remember Vanessa Paradis in that movie, enjoying Roquefort for breakfast? I adore Roquefort and dream of visiting Auvergne, its birthplace in central France. Have you been? But, back to reality, I often head to a fabulous cheese shop near our London home in search of Roquefort substitutes. It's a small shop, but the cheeses in their compact showcase are selected with such care! Once, I was on the hunt for English Stilton or Italian Gorgonzola Dolce. The Stilton was out of season, ripening for September. The friendly owner suggested an alternative – my new find: Shropshire Blue. It was vibrant yellow with bold blue mould, soft and oh-so fresh – it brightened our day. Pair it with a spicy pear chutney or experiment with other flavours. I love fig chutney with soft cheeses, or try my twist with white wine and lemon zest. Another of my favourites is mango marmalade with lime – a burst of flavour and pure joy! A zesty accompaniment complements strong blue cheeses perfectly. Treat yourself to this flavourful experience!

Ingredients

  • 6 mangoes
  • 3 limes
  • 1 kg sugar

Method

  1. 1Peel, pit and dice the mangoes.
  2. 2Add the lime juice and zest.
  3. 3Add the sugar and leave for 6 hours.
  4. 4Boil and cook for 25 minutes until slightly thickened.
  5. 5Pour into jars, seal and turn upside down.
