Ingredients

  • 2 kg assorted fish (of your choice)
  • 2 tomatoes
  • 4 potatoes
  • 1 leek
  • 2 onions
  • 4 garlic cloves
  • 1 bouquet garni
  • 2 fennel bulbs
  • 300 ml dry white wine
  • 1 pinch ground saffron
  • 4 tbsp olive oil
  • Salt and pepper

Method

  1. 1Dice the potatoes and chop the fennel and leek.
  2. 2Sauté the onions, garlic, tomatoes, potatoes, fennel and leek in olive oil.
  3. 3Add the fish heads, tails and backbones, white wine, water to cover, bouquet garni, salt, pepper and saffron. Cook for 30 minutes.
  4. 4Meanwhile, marinate the fish fillets in olive oil and saffron.
  5. 5Strain the broth, bring to the boil, add the pieces of fish and cook for another 15 minutes.
  6. 6Serve the fish separately from the broth, with toasted baguette and garlic rouille sauce.
